Are you planning to expand the types of potions that are traditionally used in the Ultima series? Those being in my recollection:
Red-Cure
Green-Poison
Yellow-Healing
Black-Invisibility
Blue-Sleep
Orange-Awaken
White-Light
Burnt Orange-Exploding
Will serpent venom still be available?
Also I never got how drinking the white potion provided light for the entire party. Any explanations?

If the potion only affected the drinker, there are a few possible biological explanations.
White potions might sensitize photoganglia or photoreceptors in the retina to ambient light. So less light would be required to get eye neurons/brain cells to encode light info, which would make shapes and contours easier to make out in general. It might have an effect on color too, but color transduction is more complicated.
White potions could alternatively expand the common visual spectrum picked up by the photoreceptors that turn light into electrical impulses. For example, the potion could expand the visible spectrum more into the higher wavelength (violet) frequencies, which would boost visibility in low light conditions.
Why it'd affect the whole party, though, would require an Ether explanation. Somehow, you'd have to argue that drinking a potion affects not only biological processes, but simultaneously and inextricably has an effect in the Ether. So somehow there's a biological effect in the drinker, and this affects the Ether around him/her, causing a similar effect in surrounding party members.

How about it causes a large lightning bug's tail to sprout out of the imbiber's posterior? The result is a light source that the entire party can see with, as well a good deal of muffled snickering.
"Oh no, Dupre, it IS your turn to drink a white again."

Are potions (or any other item really) really going to follow that Yellow-Healing; Blue-sleeping, pre-defined use or it is going to involve a more Underworld type of identification/guessing? I was playing Oblivion and I thought it was a major spoiler to identify the assassin cult's name by just looting at the corpses of the assassins and seeing *censured* robe.

That's an intriguing take on alchemy. Certainly the canon potions, to the best of my knowledge, will be included as best as Morrowind allows. What happens with various mixtures could be quite interesting.

What if the white potion, besides providing such outstanding abilities to the retinal cells, somehow managed to make the body of the imbiber emanate certain amounts of energy that stimulated the rest of the party´s retinal cells in a similar way...
I´m getting home sick...

Huh..that certainly is a neat possibility. The person themselves could emit something that aids their companions in seeing the surrounding environment; I can see how that'd work out. I mean at it's most basic, the imbiber could literally glow. That wouldn't be out of line with canon, I think.

Alas, it would be tactically dangerous
"Hey look, it´s a glowing sitting duck"
Unless...
