Hey, could anybody give me a history of New Magincia (with the most details being from U7)? I would be most appreciative.

I don't think there is an official history. You just kind of have to piece it together yourself. Here's a good start.
From The History of Britannia (Ultima IV):
Somewhere, out beyond civilization, is also reputed to lie the ruins of the legendary town of Magincia, which the gods destroyed for the insufferable pride of those that dwelt there. All of the magnificent marble palaces and gardens were devastated, and the rich, haughty inhabitants reduced to haunting spirits. No one has ever confirmed this legend, so it may just be a fable to frighten the weak of heart and instill humility in those that overvalue their own worth.
By Ultima V we know that Magincia was re-inhabited, the haunting souls were laid to rest in a new cemetery, and the town renamed New Magincia.
From The Book of Lore (Ultima V):
A towne built on the ruins of old Magincia by a colony of humble people who understand well the dangers of false, self-serving pride and the beauty of humility. New Magincia has a healer and a restaurant tucked among its numerous modest farms and orchards.
The Ultima VI text doesn't really offer any new information.
From Compendium (Ultima VI):
Having been destroyed in ancient times for its haughty pride, New Magincia was rebuilt by a more humble people who favored the simple ways of farming and rural life. With the passage of time, an industrious village has grown atop the ruins of the old town. Those who would revel in their own pride should take special note of the lesson of New Magincia.
The Ultima VII text is a little more descriptive, but doesn't really give us any historical info.
From The Book of Fellowship (Ultima VII):
New Magincia is known as the city of Humility, and hence it chooses to remain isolated from much of the rest of Britannia. If thou venture there, thou will find that the people are basically shy, but also warm and hospitable once they have gotten used to thee. The city is located on an eastern island well past most of the main trade routes. Time progresses more slowly in New Magincia than anywhere else in Britannia. The economy of New Magincia is based on shipbuilding, horticulture and raising sheep.
From Ultima V to Ultima VII there isn't much in the way of New Magincia history other than the local events that the Avatar witnesses while visiting there. You get a few facts from the dialogs, but not much.
