IMO some great RPGs that don't get the recognition they deserve (at least in North America) are the Gothic Games
. I've never heard of Earthbound though, what's it about?

(gasp!) You've never heard of EarthBound? Why, its a pinnacle of the Super Nintendo system. I highly suggest that you find yourself a copy. Since a copy of it on Ebay costs roughly $70, and I don't even know if you have a SNES, I would recommend getting a ROM of it online for your comp. I hate to force my opinions on people without explaining them more, so I'll just shut up now.
As for what its about, it has the basic four characters together, HP/MP (or PP as they have it in the game), and a fairly simple equipment system, which just has weapon, body, arms, and other. What makes it unique is its tongue and cheek humor.

I'd go into more detail, but that might ruin the game for you. I hope you look into it, though.

A list of 5 will be limiting, but here goes:
1: Dues Ex - a shining example of emergent gameplay, and dare I say it, Warren Spector's Magnum Opus. Must be played through multiple times to be fully appreciated for its unprecedented level of depth
2: Baldur's Gate series - sorry to reiterate, but it must be mentioned for its impressive capacity to allow the player to truly role-play a character of any alignment
3: Quest for Glory series - a saga of mirth, discovery and sheer entertainment, built around a progressive attribute system similar to Morrowind. Players could play as a warrior, thief, or wizard, heavily influencing the storyline as well as the approaches to completing the game. It also allowed players to export their characters from one game to the next, and if they were a virtuous character in the first two games, a fourth class, the Paladin, became playable in the third installment of the series
4: Legends of Valor - a very obscure title, it was an excellent RPG for those that were able to get past its shortcomings. It allowed the player to align with various Guilds (fighters, mages, thieves, clerics) in order to accomplish the ultimate goals of the game. Character creation, persistent stats (your life bar was set at char creation and could not be increased throughout the game while your character slowly ages) the need to eat, sleep, see a healer occasionally, all factored into a memorable RPG experience
5: Morrowind - most here will not need to be sold on the merits of this title. A standard to which all sword and sorcery RPG's should be held up too. Oblivion was to Morrowind what Dues Ex: Invisible War was to Dues Ex. A dumbed-down, hollowed out shadow of its predecessor
