Off the top of my head - Dupre, Shamino, Lord British, Iolo, Gwenno, Jaana, Katrina, Spark, Sentri, Mariah, Geoffrey, Julia, Zippy, Johne, Gorn, Maxwell, Toshi, Saduj, Tseramed, Selina, Stefano, Petra, Boydon, Automaton(with summon spell), Wilfred.

I think these are most of them from ultima 5 through serpent isle.

OK...tough one...

Here's the list by game:
Akalabeth, UI, UII - None

UIII - A party of four that the PC has to create.

UIV - All of the standard companions:
Geoffrey, Iolo, Shamino, Dupre, Julia, Jaana, Mariah, and Katrina.
Of course, in this game, whatever profession you end up as, you can't have that NPC in your party. (i.e. You are a bard, Iolo can't join)

UV - All of your old companions, in addition to:
Saduj, Gorn, Johne, Toshi, Maxwell, Sentri, Gorn, and Gwenno.

UVI - All of your old companions except Mariah and Geoffrey, and:
Sherry the Mouse, Gwenno, Beh-Lem, Sentri, Segallion, Leodon, and Leonna. ( I might have forgot one here.)

UVII - Iolo, Dupre, Shamino, Spark, Jaana, Tseramed, Trellek, Katrina, Julia, and Sentri.

SI - Iolo, Shamino, Dupre, Petra, Stefano, Selina, Boydon, several automatons, Mortegro, & Wilfred.

UVIII and Ascension - None, of course.

You also did not have companions in the Underworld games.
Lord British also cannot join.

I knew I'd forget one or two, but 'tis the nature of the game...It was also 3:30 in the morning when I did the list...go figure that I miss one or two...
